The phrase "Uber AI" refers to AI that are killable for specific rare drops from the Uber loot table. Uber AIs include:

These can be killed by one strong player and have a short respawn time. They can be found roaming in the tougher parts of Warp 3.

Hard Ubers

These usually require multiple players to kill and have a re-spawn time of half an hour and a lockout of 5 days.

Olympus Ubers

These aren't ubers, no, they're akin to gods, even if they are imposters. Exchanging lasers with them is not for the weak-hearted, it is for those accomplished beyond mere formalities, or for the insane. To bring one down takes a large group of powerful and skilled individuals.

Insane Ubers

These ubers are not to be messed with. Some will ignore you cause of your insignificance so be wary of what you do.
