An escape pod is your friend in time of need. If your shields go down to zero and you have an escape pod (sold in most AI stations) you will be ejected in a pod. If you equipped the right Gear Glue you won't even lose any items. If you haven't equipped Gear Glue you may lose some things. Equipped shields, engines and energy generators will never be dropped, although equipped weapons can fall out of your ship when you die.

An Escape Pod also prevents you from being ejected from your ship as a Spirit upon death, which means you won't lose any money and you won't get into Death Debt.

Unfortunately your Escape Pod can be destroyed. If you are fighting AIs you don't have to worry about it, as they will never target your pod. If you fight players, you have to look out, they might destroy your pod causing your Spirit to be ejected after your pod's shields reach zero.

There are many types of escape pods that aren't sold in AI stations (e.g. Slave Mastery Pod or Rasputin Pod). They all have their own specialities, a few have more shields, others have more top speed, etc.
